Pav Bhaji

I thank one of my very good friend Shilpa to share this recipe with me. She comes from Bombay (Mumbai), the place where we get amazing foods, especially delicious snacks and appetizers of India, called chaats (you can see that Pav Bhaji masala that is used has Mumbai on the box- you can find this at any Indian grocery store. you can also use any other brand).

Pav Bhaji Recipe: This can also be called Indian burger. We need hamburger buns(Pav) or any other variety of soft bread toasted with some butter (Yum!) and below is the method to prepare the filling ( Bhaji). This is eaten by garnishing with raw sliced onions, cilantro and lime juice stuffed on the top of the bread(Pav) and filling(Bhaji)

Method to cook Bhaji:
List A: Ingredients to pressure cook or boil on high:
Cauliflower- 2 cups, chopped (Around half)
Potatoes-2 (chopped)
Carrot- 1 (diced)
Water-2 cups
Salt- to taste
Turmeric powder- 1/4 tsp.

You will also need potato masher to mash all the veggies after cooked. Optional veggies that you can use are green beans and cabbage in pressure cooking step but I ever tried using these.

List B: Ingredients to saute:
Oil- 5 tbsp.
Cumin seeds (optional)-1/4 tsp.
Ginger and garlic- 1 tbsp.( paste or grated).
Onions- 2(small, finely diced).
Tomatoes-2 (2 small, finely diced).
Green Peas- ½ cup.
Green chili -to taste (caution as you will be also adding chili powder).

List C: Spices
Pav Bhaji Masala- 2-3 tsp. (I always use Bombay Pav Bhaji Masala, but any brand will work).
Chili powder- 1/2-1 tsp. or to taste
Cumin powder- 1/2 tsp.
Coriander powder- 1/2 tsp.
Amchoor(dry mango) powder- ¼ tsp. (optional).
Optional ingredient that you can use for this step is bell peppers of any colors; I almost skip this ingredient every time I make this.

List D: Garnishing step.
Bread(Pav)- Hamburger or any soft variety.
Onion-1, thin slices
Cilantor-1/4 cup
Lime juice-to taste.

1. Pressure cook all the ingredients under list A with 2 cups of water (amount of water may vary depending on the amount of veggies you choose to use). Use the right amount of water making sure that you are not burning the container with less or making the veggies soggy by adding too much water. After it is cool enough to work with, take a potato masher and mash all the ingredients.
2. Now work with sauteing step using ingredient to under list B. Take oil in a pot and add the rest of the ingredients under the same order as in the list. Add cumin, ginger garlic paste, onions and wait for onions to turn transparent before adding tomatoes, green peas and chilies.
3. Now add the above pressure cooked and mashed veggies to the sauteing pot and mix well.
4. It is time to add all the spices under list C and cover the lid and let it cook for 20 minutes or more.
5. Finish the chaat by garnishing with onions, cilantro and lime juice.
