All-purpose flour 3 cups( bleached variety, to get white color and quantity required may be little more than 3 cups in summers)                                                                                                

Salt-3/4 th tsp.

yogurt-1/4 cup

Oil- 3 tsp.

Sugar- 1 1/2 Tsp.

water-1+_1/4 cup

<Rapid Rise Yeast – 1 1/2 tsp (if using dry active yeast, dissolve it with the sugar in the warm water and let it foam up before adding to the flour)

Warm Water – approx 6 Tbsp (give or take 1 tsp)

Method: Take lukewarm water in a small bowl, add water, sugar, yeast, salt, oil .Let it raise for 2 minutes. In a mixing bowl, take 3 cups all purpose flour, 1/2 cup yogurt and add the yeast, water mixture and mix well. Add more flour if needed. Make a soft dough and cover with damp cloth and let raise for 3-4 hours. Keep in the refrigerator for about 4 hours.

This is similar to naan recipe. Tip to get perfect bhatura is the dough once raised, should sit in the fridge for few hours. Throwing the dough in the refrigerator not only makes the bhaturas puff up easily but will also make rolling easier.

This recipe makes medium sized 12 bhaturas.
