CHALLAH BREAD :
Makes 4 big Loaves.

2 1/2 cups warm water
1 T. yeast
3/4 cup honey
4 T. vegetable oil
2 eggs
1 T. salt
8 cups flour
1-egg white for brushing on top

1,Sprinkle yeast over water. Beat in honey, oil, 2 eggs and salt. Add flour, stirring in a couple of cups at a time. Knead until smooth, about 8-10 minutes.
Place in oiled bowl; cover with damp cloth. Let rise for 1 1/2  hours.

2.Punch down. Divide in half (for 2 very large loaves) or Quarters (for 4 big loaves). Divide each piece in thirds and roll into snakes and braid. Place on greased Pan. Let rise  for 1 hour or overnight in fridge (loosely Cover with greased saran wrap if putting in fridge).

3.Brush with egg white. Bake 375 degrees for 30-35 minutes for large loaves; 25 minutes for small loaves.
