Chicken Dumpling Soup

Ingredients: (Makes about 30 dumplings). serves 10

For Dumplings:

Ground chicken 2 lb.
Onions 2 small (finely shredded)
Green chili-2 (chopped)
cilantro 1/4th cup (finely shredded)
Salt and Pepper to taste 1/2 tsp. each
veggies 1/2 cup mixed (carrots and celery)- this can be optional.

Wonton wraps for covering dumplings 1 packet.

Method: Mix all the ingredients for filling and wrap it around with a wonton wrap by taking 1 tbsp at a time.

To make Soup:
noodles Dry 1 cup (cook according to the package instructions separately).
mushrooms 1/4th cup (shitake variety)
Basil 1/4th cup or few leaves.
Colored peppers Optional (less than 1/4th cup).
Chicken stock 6 cups + water 2 cups

To garnish- Green onions and cilantro.

Method to make soup:

Take the chicken stock and add water, and add the dumplings and ingredients listed under soup (mushrooms, basil, colored peppers, salt and pepper) and let it cook for about 10- 11 minutes. When it is ready to serve mix in the noodles cooked separately and Garnish with green onion and cilantro.
