Chicken Tacos
Ingredients:
Ground meat- 2 lbs. (I have used chicken but can be substituted with beef or turkey)
Onions- 1 medium, finely chopped.
Ginger/Garlic- 1 tbsp. (one or both of these can be skipped).
Cilantro- 1/4th cup (chopped).
Oil (vegetable or canola) – 2 tbsp.

Seasoning for meat:
Chili powder- 1 tsp.
Ground cumin- ½ tsp.
Cornstarch- 2 tsp.
Salt- 1 tsp.
Paprika- ½ tsp.
Ground coriander- 1 ½ tsp.
Mix all these ingredients in a bowl to make Taco seasoning.

For Assembling:
Hard Taco shells- 1 package
Onions and colored pepper (or any other veggie of choice) – ½ cup (grilled or stir fried)
Mexican Salsa- As needed
Sour crème- as needed
Mozzarella or Mexican blend cheese- 1/4th cup or more as needed.

Method:
1. Take oil in a pan, add the onion and cook until softened and lightly browned around the edges, about 3 to 4 minutes. Add the ground meat, 1 teaspoon salt, and ginger/garlic. Cook until browned, about 3 to 4 minutes, stirring occasionally, to break up the meat. Add prepared Taco seasoning. Bring to a simmer and cook, uncovered, until sauce is slightly thickened, 2 to 3 minutes.
2. Bake the Tacos for 5 minutes (or according to package instructions) and layer it with meat, vegetables, salsa, sour crème, cilantro, etc.

Additional topping choices: jalapeno slices, lettuce and tomatoes. Serve immediately after assembling.
