Banana walnut muffins

I came across this tiny cute little banana’s at the grocery store and it tasted so good, I wanted to try out some yummy baked goods. surprisingly, this came out amazing and was not sticky after baking unlike regular bananas and was more sweeter. I would not go back to using regular big ones, as long as I do not have trouble finding these small ones. It is worth a try if you find in the store near you.

Banana walnut Muffins:                                                    makes 14, small muffins.

Banana (mashed)- 4 small or 2 big.

Sugar (white)- 1/2 cup.

All-purpose flour – 1 ½ cup.

Baking powder-1 tsp.

Baking soda-1 tsp.

Butter-1/2 cup

Egg-1 (extra-large)

Vanilla extract 1 tsp.

milk ½ cup

Walnuts-1/4 cup ( chopped)

Method:

  1. Mix in the All-purpose flour with baking powder ,baking soda and white sugar( dry ingredients)
  2. Beat the egg with vanilla extract and add rest of the wet ingredients, milk and butter.
  3. Fold in the mashed bananas at this time
  4. Add chopped walnuts in the last step and give a gentle mix.

Bake @ 325 for 35 minutes. Baking time varies depending on the type of the pan and oven. When a toothpick inserted in it comes out clean without sticking.

Tips– If allergic to walnuts or is not to your taste, you can substitute  with chocolate chips or blueberry
