Chicken Burrito

Ingredients required:
Tortilla of your choice
Chipotle Chicken
Beans( I have used black variety in this recipe)
Mild salsa
Hot salsa
Sour creme

1. Making Chipotle Chicken:

Boneless skinless chicken breast or thighs: 1 lbs.
Fajita seasoning mix: 2 tbsp.+2 tbsp. oil.Mix the chicken with the seasoning and oil, marinate for at least 6-8 hours. grill indoor or outdoor. In oven, I let it sit for 35minutes@ 425

2.Preparing Black Beans:
Beans: canned or soaked ( 1 canned or 1/2 cup soaked)
Onions-1 medium
Ginger/garlic paste-2 tsp.
Chipotle or Mexican chili powder-1tsp.
cumin powder-1/2 tsp.
Tomato puree-1/2 cup.
oil-2 tbsp.
Jalapenos- optional(if extra spice needed)( finely chopped)

Take oil in a pot, saute onions, ginger/garlic paste , mix in tomato puree and add all the spice powders(chili , cumin ), Jalapenos( if using). Add the cooked beans and salt if using dry variety of beans.

3.Making Rice: Soak 1 cup of rice in rice cooker and add double the volume of water and cook until done.Cilantro-1/4 cup
lime juice-2 tsp.
salt-1/4 tsp.
jalopenos-1/2 tsp.
oil-3 tsp.
Add all the ingredients to cooked rice and toss well.

4.Mild( Tomato) Salsa:
onion-1( small)
jalopeno-1/2 tsp.( chopped)salt-to taste.

5. Making Guacamole:
Tomato- 1(small). diced
Garlic- 2 cloves, chopped.
Cilantro- 1/4 cup, finely chopped.
Lime juice- 1 tsp.
Salt-less than 1/4tsp.
In a bowl, mash the Avocados and add all the ingredients listed under 5. It is ready to go on the tortilla.

6. Garnish and finish:

Take the tortilla and place Prepared rice, beans, chicken, mild and hot salsa, Guacamole, sour creme and cheese, if you are using.
