Chicken Mushroom Stir Fry


For preparing chicken: Marinating ingredients

Chicken- 1 lb. (boneless and skinless)
corn starch- 2 tsp.
salt and pepper to taste
soy sauce- 1 tbsp.
oil- to shallow fry the chicken pieces

Mix all the marinating ingredients to chicken for at least 30 minutes and shallow fry until chicken is completely cooked (light brown on both sides).

Preparing veggies:

Ginger- 1 tbsp. (minced)
Shallots- 1/2 cup
Bok Choy- 1 /12 cups (chopped)
Mushrooms- 1 1/2 -2 cups (sliced)
Colored Peppers- 3/4 th cup cut into thin strips.

Sauces and spices:

Soy Sauce- to taste (1 tbsp.)
Fish sauce- 1 tsp.
hoisin sauce or sweet and sour sauce- 2 tsp.

For Sautéing:
Sesame oil- 2 tbsp.

white sesame seeds

1. In a wok, take 2 tbsp. sesame oil and add the ginger, shallots, peppers, mushrooms and bok choy. Stir fry for a minute and then add the prepared chicken.
2. Add all the sauces and stir on high heat for about 1-2 minutes.
3. Garnish with cashews, white sesame seeds and cilantro

Stir Fry is a very quick process that is done on very high heat. Do not overcook the vegetables and make sure to have everything ready before starting the stir fry process.
