Spinach rice Ingredients:

Rice- 1 1/2 cups

Water-2 1/2 cups.

Ingredients for grinding:

Spinach (Fresh or frozen)-1/2 cup

Ginger- 1 tbsp..

Green Chilies- 3

Spice powders:

Cumin powder-1/2tsp.

Nutmeg powder -1/4tsp.

Coriander powder-1 tsp

For Sauté:

Oil-2tbsp+1tbsp

Onions-1 big

Whole spices (optional)-bay leaf, clove, cinnamon (1-2 each)

Garnish:

Cilantro-1/2 cup(chopped)

Nuts( cashews and raisins)-1/4 cup

 

Method:

1. wash and soak rice(at least for 30 minutes) Meanwhile prepare grinding mixture with ginger, spinach and green chilies ( first roast these Ingredients with 1tbsp oil, before grinding to eliminate raw flavor)

2. Take 2tbsp oil in a pot, add sliced onions, add dry whole spices, add the ground paste of spinach, ginger, and green chili , sauté for few minutes. Add the dry spice powders after the adding the spinach mixture, sauté for 5 more minutes.

3.Add the soaked and washed rice ,add 2 1/2 cups water, salt and bring to boil and simmer for 15 minutes.

4.Garnish with nuts and cilantro.
