Tomato Rice

Ingridients:
Rice- 1 cup
Tomato-3 (diced)
Onions-2 (diced)
Oil-2 tbsp+ 1 tsp

For Grinding:
Green Chillies-2
Ginger- 1 tbsp
Garlic- 1 tbsp
Coconut- 1/4 cup (shredded)
Cilantro- 1/2 cup (chopped)

Spices:
Coriander powder- 1 tsp
Cumin powder-1/2 tsp
Whole Spices- Bay leaves, StarAnise, Cardamom,cloves, cinnamon- 2 each

For Seasoning:
Curry leaves- 4 -5 springs
Mustard seeds- 1 tsp

Method:
1.Wash and soak rice for atleast an hour and rinse off all the water.
2.Take a tsp of oil and roast ginger,garlic,coconut, green chillies and cilantro(to eliminate raw floavor) and make a smooth paste with as little water as possible.
3.Take 2 tbsp of oil in a pot or pressure cooker and add whole spices(Bay leaves,Star Anise, cardamom, cloves, cinnamon ) and add Mustard,curry leaves and diced onions and Tomatoes. Saute till the onions are light brown and add the above ground paste of coconut, chilli, ginger, garlic and cilantro and cook for few minutes.
4.Add spice powders( Coriander powder, cumin powder)
5.Add 1.5 cups of water and let it come to a boil in medium high heat and add the washed and rinsed rice.Reduce the heat and cook with lid closed in pressure cooker or cook in the pot for 10 more minutes until rice is done.
