Mango Spring Roll with Mango Sauce

This Mango Spring Roll is one of my favorite food to indulge on and still not feel guilty about it since it is so low in calories .My friends love this and is always a huge hit in potlucks. I serve this delicious healthy roll with homemade mango sauce. With rice noodles and rice papers with veggies,it is almost like a meal .


Spring Roll Package-1( Available at Asian Store)

Rice Sticks-3 cups dry ( prepared as per Package instructions)

Mango-1 cup (French cut)

Cucumber-1 cup (French cut and de-seeded)

Lettuce- 1 cup( Shredded)

Alfa Alfa Sprouts-1/2 cup

Cilantro-1/4 cup (chopped)

Almonds-1/4 cup (silvered)

Lemon juice 1 tbsp.

Salt -To taste

Pepper-To taste

Black  Sesame oil 1 tsp.


1. Prepare Rice Sticks according to package directions, drain and keep aside.
2. Cut all the veggies .Mix all the vegetables in a Mixing Bowl and add the rest of the Ingredients to the mixing bowl( Sesame Oil, salt, pepper, silvered Almonds, Cilantro, Lemon Juice)
3. Fill a wide, shallow dish or bowl with very warm water. Place one rice wrapper in the water for about one minute, or until it is soft and pliable. Remove from the water and spread it out evenly on a dish or other work surface. Take a small part of all the prepared ingredients and layer them on the bottom half of the rice paper wrapper. Be careful not to over stuff.
4. Fold the bottom half of the rice paper wrapper over the filling. Hold it firmly in place and fold the sides of the wrapper in. Then, continue rolling the wrapper, pressing firmly down to hold the folds in place.
5 . Place the Summer Roll on the damp paper towels in the prepared container.
6.. Repeat process for remaining rolls. Each Summer Roll should be placed in the platter so that it does not touch the next roll, else they will stick.
7. Tightly cover platter with plastic wrap and refrigerate until ready to serve. Summer Rolls should not be made more than 3-4 hours before serving.

Mango Sauce:

Aroy-D canned Mango-1 (Available in Asian Store)

Dry red chillies-2 (small)

Basil-3 -4 leaves

Salt to taste (optional)


Mix everything in a blender .take 1 tsp. of oil in a pan on medium heat and pour the Mango, Basil, Chili mixture to the pan. Let it cook for about 3-4 minutes or until it thickens (we get the desired consistency in less than 5 minutes .Chill for 2 hours before serving.

Can be stored in the refrigerator or about a week.
