Wheat berry Salad

This  recipe that I have changed from the original version that  I found in this website. Link  is below:


 Wheat Berry Salad

Fresh ingredients:
1 red pepper, diced
1 small red onion, diced
1 small  bunch fresh cilantro, leaves chopped
1 small jalapeno pepper, cored and diced
juice of 1 lime or bottled lime juice
Storage ingredients:
2 c. cooked wheat berries (recipe below)
1 can corn( can also use fresh)
1 can black beans(or dry works well too)

Seasoning ingredients:

1 t. chili powder
1 t. cumin powder
2 tbsp.. cider vinegar
1 T. sugar
4 tbsp. c. vegetable oil
1 t. salt

Combine all ingredients in a bowl.  Toss well.  Chill for at least 1 hour before serving.

Basic  Wheat Berries:

1 cup of dry wheat berries and 3 cups of water +1 1/2 tsp. salt.- Cook it in the slow cooker for 3 hours or simmer in the stove top for 40 minutes.
