Guacamole: Guacamole is an avocado-based dip that began with the Aztecs in Mexico. In addition to its use in modern Mexican cuisine it has also become part of American cuisine as a dip, condiment and salad ingredient.

Haas avocados, halved, seeded and peeled- 3
Lime- 1 tbsp.
Kosher salt- ½ tsp.
Roasted ground cumin- ½ tsp.
Red chili powder- ½ tsp. (or cayenne pepper)
Chopped cilantro- 3 tbsp.
Onion- 1 (diced)
Roma tomatoes, seeded and diced- 2
Garlic- 1 clove (minced)
Jalapeno pepper- 1 chopped (optional)

In a large bowl place the avocado pulp. Using a potato masher add the salt, cumin, and red chili powder and mash. Then, fold in the onions, tomatoes, cilantro, jalapenos (if using) and garlic. Let sit at room temperature for 1 hour and then serve.
