Mexican 15 Bean Soup

Ingredients:

 1 (8 ounce) package 15 bean dry soup packet (Cajun)

 10 cups water (stove top)

 Or 6  cups of water (slow cooker)

Sautéing:

  oil 3-4 Tbsp.

1-2 green chilies or to taste (optional)

2 onions, chopped

3-4 Roma tomatoes chopped.

5 cloves garlic, minced.

1 tbsp. ginger-shredded.

1-2 green chilies or to taste (optional)

Spices:

Salt to taste.

1/2 tsp.- Dried  Basil and  oregano.

½-1 tsp. chili powder or to taste

½ tsp. black pepper powder

1/2 tablespoon crushed red pepper flakes

½ tsp. cumin  powder.

Garnishing:

Cheese (shredded)

Sour  cream.

Chopped cilantro

Directions:

Soak the bean for at least 8 hours’ Place them in a slow cooker with 6 cups  of water, salt and chili powder on low setting and cook overnight. (If using pressure cooker, on medium high For 45 minutes with 10 cups of water)

Heat 3 or 4  tbsp. of oil in a pan and Sautee garlic/ginger until light  brown and add onions and tomatoes. Use optional green chilies at this time.

Add spices, cumin, herbs, pepper powder, crushed red chili Flakes to the pan and fry it for 7-8 minutes. Add this mixture to cooked beans and cook on high for 1 hour in slow cooker or half hour on stove top.

Serve with cilantro, cheese, sour cream, onion (optional).
