South Indian style Veggie Stir Fry

Veggie stir fry in south is a very popular side dish. The versatility of using varieties if vegetables in this recipe makes this a part of everyday cooking in south Indian homes.

Veggies of your choice (I have used carrots and beans)- 3 cups.
Oil- 3 tbsp.
Red chilies or green chilies- 2 or 3 (finely diced).
Onions- 1 (medium sized that is finely diced)- I have skipped in this recipe.
mustard seeds- 1/2 tsp.
Cumin-1/2 tsp. (whole)
Turmeric- 1/4th tsp.
Salt to taste.
Curry leaves0-optional (4 or 5)

Coconut grated- 2 tbsp.
Cilantro- 1/4th cup (optional

1. Ina pot take oil, and add mustard seeds when hot. quickly add the curry leaves, chilies and onions.
2. Add the vegetables, salt, turmeric and cook in the low flame for few minutes with lid open.
3. Garnish with grated coconut and cilantro when it is almost done.
